Shiraz (aka Syrah) is Australia’s most popular wine. A quintessentially Mediterranean-climate variety, a high-yielding grape resistant to pests and diseases, producing dark, inky, aromatic reds with black fruit flavours and peppery, spicy characteristics. In France and the United States, the variety is called Syrah. Shiraz produces dark red wines whose purest incarnation produces a wine with memorable aromas which can be smoky, floral, peppery, minty or spicy and
often linked to a kind of medicinal or creosote-like character. Cool climates in parts of Western Australia and Victoria bring out the mint, pepperiness and the spice in Shiraz, while the warmer it gets the more it changes from raspberry to blackberry, becoming chocolaty and, with age, tarry and gamey. Shiraz is a very versatile variety and produces a myriad of styles ranging from light bodied through to big full-bodied wines. Characteristically the bunches are long and cylindrical and are made up of small to medium oval berries, variously coloured from light purple to intensely purple black. The berries are prone to decrease in size (through water loss) towards the end of ripening and may shrivel.
Shiraz wines generally have an abundance of flavour, often with a perceived mid-palate sweetness derived from ripe fruit and/or high alcohol. Complexity comes with time, as the primary fruit characters slowly mature. Oak characters may be incorporated in the flavour and structure of these wines.
Shiraz wines are made in a variety of ways, but generally with techniques that give medium to high extraction of colour and flavour from the skins. The big, full-bodied styles (often made from riper grapes), are pumped and plunged over during fermentation and may be partially barrel fermented. Some wines are still fermented in open fermenters. Many wines are matured in Americanoak and thus may show vanillin and other oak characters along with their intense berry flavours.
The beauty of Shiraz is that it can flourish in a range of climates.The cooler regions of Central Victoria, Coonawarra and Padthaway are renowned for structured wines with black cherry, pepper and spice characters rather than the chocolate and stewed plums found in warmer climates.
Shiraz can be made into a range of styles, defined by the terroir of the region and the winemakers’ creativity. In an attempt to allow for regional characters to be expressed, many winemakers are moving away from 100 per cent new
American oak, preferring the use of older barrels and/or French oak. The result is a plethora of new styles with finesse and complexity.
With its soft ripe tannins, Shiraz can be crafted into wines suitable for immediate consumption. However it’s real character is seen in wines with longevity that show layers of intoxicating complexity with age. Shiraz deserves its status as Australia’s flagship grape variety.
